banana muffins

 

Serves 10 / 10 mins prep / 20 mins cook

These muffins are super easy and full of quality carbohydrates.

Perfect for on-the-go breakfast or snacks.

The same recipe can be made into one big banana bread loaf (cooking time: 35-40mins). Pour into a loaf tin lined with baking paper).

INGREDIENTS

  • 2 cups oats

  • 4 bananas (ripe)

  • 2 eggs

  • 3/4 cup pitted dates (softened in hot water, and drained).

  • 1 teaspoon baking soda

  • 1/2 tsp cinnamon

  • 2 Tbs melted coconut oil

  • pinch of salt

  • 1/2 cup dark chocolate chips (optional)

METHOD

  1. Preheat oven to 350 degrees.

  2. Grease a muffin tin or line with grease-proof paper.

  3. Mix all ingredients in a blender or food processor until smooth.

  4. Pour batter into muffin tins. Top with chocolate chips (optional).

  5. Bake for 15-20 minutes.

  6. Store in the fridge for up to 3 days.
