banana muffins
Serves 10 / 10 mins prep / 20 mins cook
These muffins are super easy and full of quality carbohydrates.
Perfect for on-the-go breakfast or snacks.
The same recipe can be made into one big banana bread loaf (cooking time: 35-40mins). Pour into a loaf tin lined with baking paper).
INGREDIENTS
2 cups oats
4 bananas (ripe)
2 eggs
3/4 cup pitted dates (softened in hot water, and drained).
1 teaspoon baking soda
1/2 tsp cinnamon
2 Tbs melted coconut oil
pinch of salt
1/2 cup dark chocolate chips (optional)
METHOD
Preheat oven to 350 degrees.
Grease a muffin tin or line with grease-proof paper.
Mix all ingredients in a blender or food processor until smooth.
Pour batter into muffin tins. Top with chocolate chips (optional).
Bake for 15-20 minutes.
Store in the fridge for up to 3 days.
