banana + strawberry bread

This bread is full of fibre and healthy carbs. A super healthy snack for any time of day!

INGREDIENTS

  • 1.5 cups buckwheat flour

  • 4 ripe bananas

  • 2 eggs large

  • ⅓ cup coconut oil

  • ⅓ cup almond milk

  • 1 tsp vanilla extract

  • 2 Tbs tahini

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

  • 1 teaspoon cinnamon

  • ¼ teaspoon nutmeg

  • ¼ teaspoon salt

  • 1 cup frozen strawberries (thawed)

OPTIONAL TOPPING

  • 1 banana (sliced vertically)

METHOD

  • Preheat oven to 180°C + line loaf tin with baking paper.

  • Blend all ingredients (except strawberries) until smooth batter is formed.

  • Add strawberries, stir only 2-3 times (it’s okay for the strawberry juices to not be completely mixed in).

  • Spread the batter into the prepared tin.

  • Add banana topping, if desired (centre of banana facing up).

  • Bake for 50 minutes, or until fully cooked.

  • Allow to cool completely before slicing.

Serve with: yoghurt, sliced banana, cinnamon and/or almond butter.
