cacao, cherry + beetroot pancakes

Serves 1 / 3 mins prep / 10 mins cook

These pancakes are packed with wholesome carbs, fibre, protein and antioxidants. 
They work to fuel the body whilst improving blood flow and oxygen utilisation throughout the body.  

 

INGREDIENTS

·      ½ banana

·      2 Tbs chia seeds

·      1/2 cup almond milk (or milk of choice)

·      2 eggs 

·      ½ cup rolled oats 

·      2 Tbs cacao 

·      1 Tbs beetroot powder

·      ½ cup cherries (frozen or thawed)

·      ½ cup raspberries 

·      ½ tsp vanilla essence (optional)

·      1 tsp maple syrup (optional)

METHOD

·      Combine all ingredients (except cherries + berries and oats) in blender until smooth. 

·      Add cherries, berries and oats to batter. Mix well with spoon + set aside for 10 minutes. 

·      Heat non-stick frypan over medium heat. 

·      Fry pancake batter on pan until golden brown on both sides. 

·      Optional: Serve with yoghurt, cacao powder, maple syrup or extra fruit. Enjoy immediately!

 

NOTE: you can replace powdered beetroot with cooked beetroot. Add more oats and less almond milk if so.
