fruit + nut breaky bars

Serves 10 / 5 mins prep / 30 mins cook

These bars are high in fibre, antioxidants + are anti-inflammatory. 
Convenient for breaky or snacking.  

Makes 10 bars

 

INGREDIENTS

·       1/2 tsp ground cinnamon

·       1/2 tsp ground turmeric

·       2 tsp ground ginger

·       2 tbsp honey

·       200ml milk of choice

·       150g oats (or quick oats) 

·       3 Pink Lady Apples (chopped in small bits)

·       2 bananas (mashed) 

·       1 handful of walnuts (or whatever nuts you like)

·       1 cup dried apricots (chopped in half) 

METHOD

1.     Pre-heat the oven to 175C (fan oven) + line a baking dish with grease-proof paper. 

2.     In a large mixing bowl, combine the oats, ginger, cinnamon + turmeric.

3.     Add the mashed bananas to the bowl of dry ingredients + mix until fully combined.

4.     Add the milk, honey, apples, apricots and walnuts + mix. 

5.     Pour mixture into baking dish + bake in the oven for 30 minutes. Insert a toothpick into the mix. If it comes out 99% clean, you’re good! If not, give them another five minutes bake time.

6.     Allow to cool for 30 minutes before slicing up, serving, eating, or freezing a batch for a new week ahead!
