nutella sweet potato brownies 

Serves 10 / 10 mins prep / 25 mins cook

These brownies are packed with healthy carbs and antioxidants.
Great for snacks and pre or post exercise.

 

INGREDIENTS

·       1 medium sweet potato, steamed + mashed (skin off)

·       1 banana, steamed and mashed 

·       1/2 cup hazelnut butter (or any nut butter)

·       2 tbsp maple syrup

·       1/2 cup cocoa powder

·       1/4 tsp sea salt

·       2/3 cup oat flour (ground oats)

·       1/2 cup dark chocolate chips (optional)

METHOD

  1. Preheat the oven to 180C/350F and line loaf pan with baking paper. 

  2. In a food processor, combine all the ingredients and blend well until a smooth brownie batter remains. 

  3. Pour the mixture into the greased pan and bake for 25 minutes or until cooked through. Remove from the oven and allow to cool completely before slicing into pieces. 

 

To store. Place cooled brownies in a sealed container and keep them in the fridge. Keep for up to one week.

To freeze. Wrap brownies individually in parchment paper and place them in a ziplock bag. Keep fresh for up to 6 months.
