oat pancakes
Serves 1 / 3 mins prep / 10 mins cook
These pancakes are packed with fibre, protein and antioxidants. They nourish the nervous system and are gentle on the gut lining. They will work to keep you full and stabilise blood sugar throughout the day.
INGREDIENTS
· 2 tablespoon chia seeds
· 1/2 cup almond milk (or milk of choice)
· 2 eggs
· ½ cup rolled oats
· 1 Tbs cacao
· ½ tsp vanilla essence (optional)
· ½ cup strawberries or sliced banana
METHOD
· Combine all ingredients (except fruit) in blender until smooth.
· Add fruit to batter.
· Heat non-stick frypan over medium heat.
· Fry pancake batter on pan until golden brown on both sides.
· Optional: Serve with more berries. Enjoy!
